Put a lock on the freezer if you have children in the house, these Mojito popsicles are for the adults only, unless you make the kid friendly version by replacing the rum with rum extract.

Tangy lime, a hint of mint and a kick of rum with sugar, this fun, frozen version of the classic Cuban cocktail is a whimsical treat for summer weekend cookouts or pool parties.

Possibly the best part about these treats is that they’re super easy to prepare! Simply mix the ingredients, pour into your molds and freeze; just remember to prepare in advance so they have time to freeze before your guests arrive.

MOJITO POPSICLES RECIPE

Ingredients

  • 2 1/2 cups water

  • 1 cup sugar

  • 20 mint leaves plus more to garnish

  • 1/4 cup lime juice

  • 1/4 cup rum (2 teaspoons of rum flavored extract may be used instead of rum - recipe will yield less popsicles.)

Preparation

  • Heat sugar and water to a boil in a small saucepan. Remove from heat and stir in mint leaves. Cover and let steep until your mint syrup has cooled.

  • Combine mint syrup, lime juice and rum in a bowl. Pour the mixture into your popsicle molds, adding mint leaves into each one (if desired). Freeze for at least 4 hours.
