Victoria Randolph chatted with Thierry about how his own travels have influenced his cuisine, and how our multicultural team contributes to the preparation of authentic dishes from all over the world.

They discussed current trends such as serving small plates, which offer more than hors d’oeuvres and are rich in flavor with a spectacular presentation. Guests also love signature craft cocktails paired with mini-plates.

Chef Michael Finizia prepared poached octopus, Mugaritz potato “stones,” brava sauce, bottarga emulsion and garlic flower blossoms.

The Indian “Aloo Tikki” mini-plate was on display from the beginning of the segment, along with two signature cocktails, the Riviera and Lavender Moon.
