Possibly the best part about these treats is that they’re super easy to prepare! Simply mix the ingredients, pour into your molds and freeze; just remember to prepare in advance so they have time to freeze before your guests arrive.
MOJITO POPSICLES RECIPE
2 1/2 cups water
1 cup sugar
20 mint leaves plus more to garnish
1/4 cup lime juice
1/4 cup rum (2 teaspoons of rum flavored extract may be used instead of rum - recipe will yield less popsicles.)
Heat sugar and water to a boil in a small saucepan. Remove from heat and stir in mint leaves. Cover and let steep until your mint syrup has cooled.
Combine mint syrup, lime juice and rum in a bowl. Pour the mixture into your popsicle molds, adding mint leaves into each one (if desired). Freeze for at least 4 hours.
